Ingredients:
1 1/4 Cups Einkorn Flour
1 Cup Instant oats or Oats Slightly Chopped in Food Processor
2 tsp Baking Soda
2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp Cardamom
1/2 tsp nutmeg
1/2 tsp Sea Salt
3 large Eggs
3/4 cup Applesauce or Pear Puree
1/3 Cup Olive Oil
1/3 Cup Maple Syrup
1/4 Cup OJ
1 tsp Orange Zest
2 Cups Grated carrot
1 Cup Grated Apple
1/2 raisins or currents
1/2 chopped Pecans or Walnuts
3 tablespoons ground flax seed
Instructions:
Preheat oven to 400 degrees F. Oil a 9x13in Bread Pan, or you can make muffins.
Mix Flour, Oats, Baking Soda, Spices, and Salt until very well combined.
In a Separate Large Bowl, whisk eggs, Syrup, Puree, olive oil, maple syrup, orange juice, and orange zest until well combined.
Pour the dry ingredients into the bowl with the wet ingredients. Stir a tiny bit until just barely combined, using a spatula. It is important to not over mix.
Fold in the Grated apple and carrots, raisins, nuts, and ground flax.
Spread the batter into the baking dish.
Bake for about 20-25 minutes.
